Delivery Of Service

Unless we have specifically agreed the delivery of our service at your event, for example you may have requested that we arrive by 9am onsite for a 3pm service, or you specifically have requested that we roast a hog onsite from start to finish, or the time of serving food must be at a fixed 'guaranteed' time rather than aiming for a serving time, then delivery is at our discretion.  We have methods in which we usually work (e.g. over on our paella page it currently says that Paella is always cooked freshly onsite - 99% of the time this is correct and is what we aim to do, however for some specific events it may be that we cook offsite, perhaps because we are serving alongside another food type, perhaps because lpg gas is not allowed within a venue and/or we cannot setup outside a venue to cook), but we also must adapt depending on many variables from number to be fed, location, timings, weather, working around our other events and so on.  This may mean we arrive either earlier or later on site, we may cook offsite, we may prep off site, we may carve off or on site.  A definitive list is too involved to be possible to produce.  If there is any aspect of service that you have firm requirements for then it is important to bring it to our attention and for us to agree a variation to contract so that we are all on the same page and to avoid any misunderstanding.  Regarding timings, we always aim for service times discussed but we have to remain flexible for two reasons.  Firstly, we don't have food ready to serve in advance/in good time - food is always best served when it is ready, so we always aim for it to be ready on time.  However this doesn't allow for any delays and so occasionally the food may be ready after the discussed time (unless you have requested a guaranteed service time).  The food will always be worth the wait if this is the case!  But we won't drop our standards by always having the food ready say an hour before service and then hot holdings for excessive periods of time.  That's the nature of food and catering.  We aim to have it ready on time.  Secondly, events often do overrun, whether a wedding or a corporate event, there are delays outside of our control and we will work with you to deliver the service when it's needed.

Where specifics are required they will very specifically be referred to as 'variations to contract' and must be agreed by ourselves in writing.
